Cottage cheese is the new flour

Generation Z considers it an essential part of the modern kitchen and the internet is literally flooded with creative recipes for its use not only in the cold kitchen, but also in the warm one. And nutritionists just agree with them. Try a new trend and swap flour for cottage cheese when cooking and baking. All it takes is this one change and you’ll not only get an extra serving of protein, but also fewer calories. Your body will appreciate it.
Cottage cheese is a food with many health benefits that can be prepared in many ways and if someone hasn’t found the right recipe yet, they probably haven’t found it yet. “It is not only an excellent source of calcium, but also of high quality protein, which promotes muscle growth and recovery. It belongs to a very small group of cheeses that are high in protein and low in fat. Therefore, it is an ideal choice for a quick and high-quality filling during the day, not only for the average person, but also for athletes who need to increase their protein intake,” says nutritionist and lifestyle expert Michal Páleník.
In addition, cottage cheese also contains phosphorus, which together with calcium contributes to the maintenance of strong bones and normal cell function, and B vitamins, which in turn support energy metabolism and nervous system health. And because it is minimally processed, it also benefits healthy digestion.
Use cottage cheese instead of flour? In the world nothing new!
Get ready for an active spring and try a new trend yourself – replace flour with cottage cheese. You’ll achieve a lower calorie intake and a higher protein intake. What’s more, if you haven’t yet acquired a taste for cottage cheese in cold dishes, using it in hot dishes might be just right for you.
Slovaks were taught to eat cottage cheese by the brand rajo in the late 90s and today it brings us a worldwide trend – tips on how to use it instead of flour. Well-known Slovak food bloggers will also advise you which recipes are suitable for cottage cheese. Majka Kukučková, known on Instagram as @kukucka.pecie, made juicy brownies from caramel cottage cheese and Šimon Kán baked savoury breakfast muffins from chive cottage cheese. Michal Páleník has already tried vanilla cottage cheese to make pancakes with fruit and Peter Lackovič used white cottage cheese for pizza dough.
If you see oatmeal instead of flour in some recipes in addition to cottage cheese, that’s also a great addition. They have 2 – 3 times more fiber than regular flour and the same amount of minerals and protein. Plus, the fiber makes them more filling, so the feeling of fullness will last longer and you won’t be tempted by other foods. For desserts, we don’t add any sugar to the dough because sweet cottage cheese already contains it. However, especially with brownies, there is much less of it than is added to regular recipes with flour.
